This is personal preference to what suits your kitchen best. Upstands typically range from 80mm to 250mm high, they’re sometimes shorter in some areas to fit under window cills. Sometimes you may only have space for 100mm upstands to come out of the material so it depends on your kitchen design and how much material is required for your project.
